German Apple Pancake

A great brunch dish. Remember to use cooking apples such as Granny Smiths, otherwise the apples might become too mushy. Very tasty!

Ingredients:
1 cup milk
3 large eggs, at room temperature
3/4 cup all-purpose flour
3 tablespoons granulated sugar
2 tablespoons butter
2 medium cooking apples such as Granny Smith, peeled, cored and cut into 1/4-inch slices
1/4 teaspoons ground cinnamon
Confectioners' sugar, for dusting
Lemon wedges, for garnish

Instructions:
Preheat oven to 375 degrees F/190 degrees C.

In a medium size bowl, whisk together the milk, eggs, flour, and 2 tablespoons granulated sugar.

In a large heavy ovenproof skillet over medium-high heat, melt the butter. Add the apples, cinnamon, and the remaining 1 tablespoon granulated sugar.

Reduce the heat to medium and cook, stirring occasionally, for 2 to 3 minutes, or until the apples are softened slightly.

Remove the pan from the heat. Pour the batter over the apples in the pan. Place the pan in preheated oven and bake for 30 to 35 minutes, or until the pancake is lightly browned and puffy.

Remove the pan from the oven and cut the pancake into wedges. Transfer the wedges to warmed serving plates, dust with confectioners' sugar, and serve with lemon wedges, if desired.

Serves 4-6.

i think that it is very good one time mi friend made apple pancakes for school and we used pancake batter apples water and some vanilla extra it was sooooo good.:)

Just made this recipe again for Saturday morning post-sleepover for a group of teenagers. This recipe doubles or even triples easily and has become a family favorite! I have been asked over and over again for the recipe from mom's whose kids have had breakfast at my house1 Thank-you so much!

Most excellent! The whole kitchen smelled buttery cinnamon on a sunny morning. I'd add a bit more sugar to the apples next time as the Granny Smith were kind of sour. Fluffy edges of the pancake was the best part!
