Easy and Quick Apple and Cheese Bread

Ingredients: 175g/6oz. all-purpose (plain white) flour 2 tsp. baking powder Salt and freshly ground black pepper 100g/4oz. plain wholemeal flour 50g/2oz. solid vegetable shortening, grated 1 small eating apple, peeled and grated 100g/4oz. strong mature cheese, grated 25g/1oz. sunflower seeds 1 egg, beaten 4-5 tbsp. milk |
Instructions: Preheat oven to 375°F (190°C). Lightly grease a baking sheet. Sift the all-purpose (plain white) flour, baking powder and seasoning into a large bowl. Stir in plain wholemeal flour, the grated solid vegetable shortening, apple, cheese and almost all sunflower seeds. Whisk the egg and milk together and mix into the dry ingredients to make a soft dough. Turn onto a floured surface and knead gently into a 6 to 7 inch (15-18cm) round loaf. Place on lightly greased baking sheet and score the top lightly. Press the reserved sunflower seeds into the top then bake the loaf at 375°F (190°C) for about 30-40 minutes until golden brown. Cool slightly before serving. The bread is best eaten fresh. Makes 8 servings. |
