Puffed Apple Pancake

A very sweet and tasty puffed apple pancake to serve at your next brunch. So delicious sprinkled with powdered sugar, and topped with a dollop of whipped cream or creme fraiche. Also very nice with a little maple syrup poured over it.

Ingredients:
1 cup whole milk
4 large eggs
3 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2/3 cup all purpose flour
4 tablespoons (1/2 stick) unsalted butter
2 large Golden Delicious apples, peeled, cored and thinly sliced
3 tablespoons (packed) golden brown sugar
Powdered sugar (optional)

Instructions:
Preheat oven to 425°F (220°C). Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended. Add flour and whisk until batter is smooth. Place butter in 13x9-inch (23 x 33 cm) glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices atop melted butter in baking dish. Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes.

Pour batter over apples in dish and sprinkle with brown sugar. Bake pancake until puffed and brown, about 20 minutes. Sprinkle with powdered sugar, if desired. Serve warm.

Tip: If desired, for pancake toppings, offer your guests whipped cream or creme fraiche and maple syrup.

Makes 4 servings.

I THINK THIS RECIPE WAS GREAT BECAUSE, IT WAS SOOOOOOOOOOO CREAM AND A LITTLE SWEET.I DONT NOW ABOUT OTHER PEOPLE OUT THERE BUT, IT WAS YUMMIEEEEEEEEEEEEE!!!

This recipe was very good! I served it for my family of 11 and all but 2 loved it! If you do make it, I would recommend that after thinly slicing the apples, you cut each slice in half or thirds. I think it would be easier to eat this way.

Delicious! This is like an apple custard. Adding 1/2 cup chopped pecans or walnuts to the apples adds a wonderful dimension.
