Cola Zucchini Cake

Comments: This unlikely combination of ingredients makes a surprisingly rich and chocolatey cake. It is deliciously moist and speckled with chocolate chips throughout. Drizzle with White Chocolate Sauce. |
Ingredients: ![]() 1 package Devil’s food cake mix (2 layer size) Cola beverage (1/2 cup) 3 large eggs 1/3 cup cooking oil 1 1/2 grated zucchini with peel 1 cup semi-sweet chocolate chips White Chocolate Sauce (see recipe below) |
Instructions: Preheat oven to 350°F (180°C). Grease a 9x13 inch rectangular baking pan. Pour cake mix into a large mixing bowl. Add cola, eggs and cooking oil. With electric mixer, beat on low until just moistened. Beat on medium for 2 minutes. Add in grated zucchini. Stir mixture together. Pour into greased 9x13 inch (22 x 33 cm) pan. Sprinkle with chocolate chips. Bake in 350°F (180°C) oven for 35 to 40 minutes until wooden pick inserted in center comes out clean. Cool in pan on rack. When ready to serve, drizzle White Chocolate Sauce over cake slices. Makes: 24 slices. White Chocolate Sauce Ingredients: 4 ounces white chocolate baking bar, broken in pieces 1/2 cup plus 2 tablespoons whipping cream 1 teaspoon vanilla extract Instructions: To make sauce, melt white chocolate, whipping cream and vanilla together, stirring constantly; cool to room temperature. |

I tried this cake also, much simpler than the from scratch recipe and even moister and richer than the other recipe. Delicious!
