Trying to cut down on carbs and fat? Here's a nice recipe for a "comfort" food that will meet your needs without you having to give up the wonderful taste of apple dumplings.

Ingredients:
1 recipe Basic Pie Shell* (see note below)
4 baking apples, such as Granny Smiths
1 tablespoon lemon juice
3 tablespoons granulated sugar replacement or granulated fructose
1/4 teaspoon ground cinnamon
4 teaspoons margarine
1 egg white, slightly beaten

Instructions:
Roll out pie dough and cut into 4 equal pieces. Peel and core apples and sprinkle them with lemon. Place 1 apple in center of each piece of dough. Combine sugar replacement and cinnamon in a bowl, sprinkling evenly into cavity of apples. Top each apple with 1 teaspoon margarine. Bring opposite ends of dough up over apple. Moisten slightly with water; seal securely. Brush with beaten egg white and place in shallow baking pan. Bake at 425 degrees F/220 degrees C for 35 to 45 minutes, or until pastry is golden brown.

Makes 4 apple dumplings.

Note:
You may use store bought refrigerated pie crust. If frozen, defrost and roll out, and cut into 4 equal pieces. Follow directions above.

Very good. Will make again during holidays. Used a little Splenda Brown Sugar also. My mother used to make a milk sauce with milk, vanilla, sugar and lots of cinnamon and nutmeg, ice cold to pour over top of warm dumpling. Awesome.
