Chocolate Chip Flapjacks

An easy snack for lunch boxes.

Ingredients:
1 package (12 oz.) semi-sweet chocolate chips
200g (3/4 cup) rolled oats
3 tbsp. golden syrup (corn syrup may be substituted)
20g (1 1/2 tbsp.) margarine or butter
70g (5 tbsp.) demerara sugar (raw sugar or light brown sugar may be substituted)

Instructions:
1). Preheat oven to Gas Mark 5, 190 degrees C (350-375 degrees F).

2). Melt margarine (or butter) in a large pan and add syrup and sugar. Once thick, add oats and chocolate and stir well.

3). Pour mixture into a 20cm (8 inch) round or square baking dish and cook in oven at 190 C (350-375 F) for roughly 20 minutes. When cooled cut into squares, wedges or fingers.

Makes 16 servings.

It's tasty! mmmhmmm I made it for my husband's packed lunch and he loved it so much that he finished it all and called me and asked if i could make more for tomorrow. I added peanuts, as well. Yummy!

This would be better called: bomfire toffee. I hand to dint my baking tin trying to make the 'flapjack' come out! Basically, the mixture was to dry and I needed to adjust the recipe! However, it was very nice toffee.

Not sure if the oats measurement (I measured out using 200grams which was more than 3/4 of a cup) is right as I found the mix to be a bit dry. Still nice enough but I prefer it to be a bit more chewy. Guess it depends on your own tastes.

I loved these but mine went a bit dry and weren't sticking so I added an extra tablespoon of golden syrup and a tiny bit more butter.

Not enough butter, very dry mixture and therefore burnt round the edges. Should be around 150g of butter!
