Cream Cheese Pie

Servings: Makes 8 servings
 
Ingredients:
For The Crust:
1 cup uncooked oatmeal (quick or old fashioned)
1/3 cup finely ground nuts
1/4 cup firmly packed light brown sugar
1/4 cup margarine, melted

For The Filling:
2 8 ounce packages cream cheese (softened)
1/2 cup granulated sugar
1 tbsp. lemon juice
2 large eggs

For Garnish-Optional
Fresh Strawberries with Sauce OR
Blueberry Pie Filling, or pie filling of your choice

Instructions:
For The Crust:
Heat oven to 350 degrees F. Combine above ingredients until well-mixed. Press into 9 inch pie plate, form 1/4 inch rim around the edge. Bake 10 minutes until golden brown. Let cool.

For The Filling:
Combine first three ingredients in large bowl, mix at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Pour into pie crust. Bake 30 minutes, cool, chill several hours. Before serving, garnish with prepared pie filling or fresh strawberries and sauce.

Makes 8 servings.
