Banana Choco-Chip Muffins

Comments: This is a nice moist recipe for banana chocolate chip muffins which I created myself. I hope you like them. They are easy and quick to make, and delicious!

Ingredients: 2 eggs 1/3 cup buttermilk 1 medium size banana, mashed 1/3 cup (0.6 stick/2 1/2 oz./68g) butter, melted 1/2 cup granulated sugar 1 tsp. vanilla extract/essence 1 cup all-purpose flour 1 tsp. baking powder 1 tsp. baking soda 1 cup semi-sweet chocolate chips

Instructions: Preheat oven to 180 degrees C/350 degrees F. Line 15 muffin cups. In a bowl, lightly beat eggs. Add buttermilk, banana, melted butter, sugar and vanilla extract. Mix well. In another bowl, sift flour, baking powder, baking soda and add to egg mixture. Add chocolate chips, mix just until well blended. Spoon mixture into lined muffin cups and bake in preheated oven on a baking tray for 15-20 minutes or until toothpick inserted in center of muffin comes out clean. Makes 15 muffins.
