Easy Date and Coconut Pie

A simple crustless pie which needs just one step - mixing (or blending, if you have a powerful blender). You can boil dates if you want, I always do that.

Ingredients:
1/2 kg. (1 pound) dates, chopped
1 cup castor sugar (superfine sugar)
1 cup all-purpose flour
1 medium size coconut, grated
1/2 cup (1 stick/4 oz./113g) butter
1 tsp. vanilla essence or vanilla extract
2 tsp. lemon juice
Icing or confectioners' sugar, for dusting

Instructions:
Mix the first 6 ingredients really well. Put in an oven-proof serving dish and bake at 180 degrees C/350 degrees F for 30 minutes or until knife comes out clean. After taking it out sprinkle with lemon juice and dust with icing sugar. Serve immediately with plain cream.

Makes 6-8 servings.

This recipe was too sweet for me, and I can handle sweet believe me! Some of my neices and nephews liked it (I made it for Iftar the breaking of the fast at my parent's house), but i doubt I'll be making this recipe again.
