Chocolate Chip Swirl Cookies

Serve these cookies for special occasions or for a small brunch. They are especially good served with ice cream!!!

Ingredients:
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup (1 stick/4 oz./113g) butter or margarine, melted
1 teaspoon vanilla extract
1 egg
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 package (about 5 to 6 ounces) semi-sweet chocolate chips (or less, if desired)

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Lightly grease a large cookie sheet.

In a large bowl, mix together brown sugar, granulated sugar, melted butter, vanilla and egg. Stir in flour and baking soda (dough will be stiff). Stir in the chocolate chips. Spread dough into prepared cookie sheet. Place in preheated oven for 1 1/2 minutes, untill chips are lightly softened. Remove from oven and pour batter back into large bowl; stir 2 minutes until the chocolate chips melt making a swirl in the cookie batter. Lightly grease cookie sheet again. Drop cookies by tablespoons onto cookie sheet 2 inches apart and lightly press down. Place cookies back in 350 degree F/180 degree C oven and bake for 13-15 minutes. When finished, cool for 10-15 minutes then transfer cookies to wire rack to cool completely.
