Eggless Chocolate Cake II

This eggless chocolate cake is very easy to make. I've made this so many times, and it always turns out well. The good thing about this chocolate cake is that it isn't too sweet. Try it, and you'll love it!

Ingredients:
1 1/2 cups cake flour
1 cup granulated sugar
3 tbsp. cocoa powder
3/4 tsp. baking powder
3/4 tsp. baking soda
1/4 tsp. salt
1 cup water
1/4 cup + 1 tbsp. oil
1 tbsp. vinegar
1 tsp. vanilla extract

Instructions:
Preheat oven to 350 degrees F/180 degrees C. Grease a round 8 or 9-inch cake pan.

Sift flour, sugar, cocoa powder, baking soda, baking powder and salt together. Make a well in the center and add all the remaining ingredients.

Beat until smooth. You don't need to use an electric mixer. Pour batter into prepared cake pan.

Bake in preheated 350 degree F/180 degree C oven for 30-35 minutes or until done. Cool on wire rack.

Makes 8 servings.

Great Alternative to cakes. I made it for my daughter first birthday party. No one new the difference. I even changed the flour to 1 cup Oat Flour, 1/2 C. Barley Flour, due to wheat allergies in my family. It worked great!
