Apple and Cinnamon Muffins

I love to make these muffins during the Fall. They are delicious!

Ingredients:
1 egg, beaten
3 tablespoons granulated sugar
1/2 cup milk
1/4 cup (1/2 stick/2 oz/56g) butter, melted
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
pinch of salt
1/2 teaspoon ground cinnamon
2 small eating apples peeled, cored and finely chopped

Topping:
3 tabelspoons raw sugar
1 teaspoon ground cinnamon

Instructions:
Preheat oven to 400 degrees F (200 C). Grease a 6-cup muffin tin, or spray with nonstick cooking spray, or line cups with paper muffin or cupcake liners.

Mix egg, sugar, milk, and butter in a large bowl. Sift together the flour, baking powder, salt and cinnamon. Add the apples and mix until just combined. Spoon batter into prepared 6-cup muffin tin.

To make topping, mix sugar with cinnamon and sprinkle over tops of unbaked muffins. Bake in preheated oven for 30-35 minutes. Muffins are done when a toothpick or wooden skewer is inserted into center of muffin and comes out clean. Let muffins cool in tin for 5 minutes, then remove muffins from tin and cool completely on wire rack.

Makes 6 muffins.

very nice and smooth. good with butter. they don't need as much topping as said. tasty eatings!
