Pound Cake Cookies

I haven't made these yet but my friend did and gave me some of them. They are so good and I thought I'd share. Enjoy!!

Ingredients:
3 sticks (12 oz/340 grams) lightly salted butter
1 cup granulated sugar
2 egg yolks
3 cups all-purpose flour
1 tsp. vanilla extract
Dash of salt

For Decoration:
Pecans (optional)

Instructions:
Cream butter and sugar. Add egg yolks, flour,vanilla and salt. Refrigerate at least 2 hours. Roll into small balls and place on cookie sheet that has been sprayed with cooking spray. Flatten the balls and if you would like, put pecans on top. Bake at 325 degrees F (160 C) for 15 minutes. Cool and place in air tight container.

These are great around the Holidays and easy to decorate with sprinkles and such...Kids go nuts for them.

I baked these cookies over the weekend and they were fantastic. They are the same cookies that we used to have in the school cafeteria some years back. I thought I would never find the recipe but now I have. I encourage you to try some for yourself. You won't regret it. They are so delicious til you can't eat just one.

This recipe makes 40 2" cookies. Sprinkled the tops with cashews ground into fine crumbs. Tasted good.
