Mango Float

This dessert doesn't float, but the one eating it surely will! It is delicious and creamy. You have to use sweet ripe mangoes otherwise you can substitute canned peaches. Very easy to make!

Ingredients:
1 cup heavy cream, chilled
2/3 cup sweetened condensed milk, chilled
1/2 cup mashed ripe mango
1 tsp. vanilla extract
Thin slices of ripe mangoes
Graham Crackers or Slices of Chiffon cake

Garnish: (optional)
Mango slices
Cashew nuts or any chopped nuts you may prefer to use
Maraschino cherries

Instructions:
1. Blend cream and sweetened condensed milk together. Add mashed mango. Add vanilla. Set aside, preferably keeping it chilled until needed. (You may opt to use more sweetened condensed milk for a sweeter taste).

2. In a square 9 x 9-inch or a rectangular 9 x 13-inch Pyrex or any transparent dish, assemble graham crackers and cream mixture by arranging the crackers on the bottom of the dish.

3. Spread one third of the cream mixture, arrange some mango slices, then put another layer of the crackers. Repeat the process, ending with the cream mixture on top.

4. Sprinkle with chopped nuts (optional). Garnish with more slices of mangoes or maraschino cherries for a more festive appeal.

5. Chill before serving.

Makes 9-12 servings (depending on what size baking dish you use).

I am a filipina and this is the most famous dessert which is always present at any gatherings or just a simple dinner. It's actually better to use crushed graham crackers (available in pouches) because if you try placing graham crackers on top of the cream, it sometimes doesn't resist the weight and it sinks, and instead of mashing the mangoes, you can actually just spoon it directly from the peel (of course don't use the part with the seed), and you can also try to put unflavored gelatin into the cream and condensed milk mixture to have a firmer consistency. I have tried mangoes from different parts of the world but nothing beats the sweetness of philippine mangoes. It's like honey... so sweet especially when recently picked from the tree... smells so good, too. Since i am in Spain right now, i just use peaches whenever i fancy the mango float (or mango royale) since the mangoes available here are not sweet even when over-ripe.

The flavor and textures are very nice, but it's not very pretty or easy to serve. I used leftover crushed mac nut cookies and those were great. I'd make it again, but in individual bowls like the picture next time.

hi i am a Filipina. this dessert is really tasty and its one of my favorite too. i am not really into sweets but this mango float i can eat until i burst my stomach. hehe. i am currently in Singapore now and i introduced this to all my guests and everybody liked it, but the only thing is, its hard to find the fresh mangoes like the ones we have in the Philippines.

Whenever i think of mango dessert, mango float comes first in my mind, and i've been loving this foh-evah! another substitute for graham crackers/slices chiffon cake, would be lady fingers. You might wana try it too! its yummy.

Very good recipe. I love mango float !! For those with questions, let me try to answer them (I am in the Philippines and just about 30 minutes away from making one, as soon as my cousin comes home with the graham crackers)

CAN DRIED MANGOES BE USED?

No, tried it and the float tasted sour instead of sweet, stick with fresh mangoes.

HOW MUCH WILL IT COST TO MAKE?

Depends which country you're in. If you're in the Philippines then rejoice! You can make this for under 200 Php [around $4.50 with $1=41 pesos exchange rate). If you're from another country, the fresh mangoes will probably be the most expensive ingredient.

AREN'T YOU SUPPOSED TO ADD GELATIN TO THE MIX?

Hmmm...yes, it's supposed to be there to make the cream firm [but may not be necessary if you serve the float half-frozen out of the fridge so it's still solid). Prefer it with gelatin though, so it doesn't melt like ice cream on your tongue, but rather half-solid so you can enjoy it a little longer in your mouth.
