Servings: 1 loaf

Comments:
This is a quick and easy banana bread that's really moist. I have made this for Christmas gifts for neighbors and friends.

Ingredients:
3 large ripe bananas, mashed
2 cups self-rising flour
1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1/2 cup chopped nuts

Instructions:
Mix the flour and sugar together. Lightly beat eggs and add the mashed bananas and oil. Mix in the flour/sugar mixture. Add nuts. Pour batter into a greased 9 x 5-inch loaf pan. Bake for 1 hour at 325 degrees F (160 C). Cool in pan on wire rack.

Makes 1 loaf.

This was such a simple, and DELICIOUS recipe, I brought it for a pot luck at work. Being a 22 year old college student, my co-workers were impressed! Thanks Gramma! p.s. I added about 1/2 tsp. Danish Powdered Vanilla from my Grammas cupboard, and it made a YUMMY second loaf!

I made this recipe at school for an assignment... It is such a simple recipe with great taste and moisture. My mother makes banana bread with much more ingredients but has turned to this recipe. Now its a regular recipe that I make throughout my house. The only downside is that it takes 1 hour in the oven which my cooking teacher wasn't happy with.

Tastes great, soft moist texture. Used soft brown sugar, I forgot to put the oil in and it still had great texture and flavour, added the spices and 1 tsp bicarb of soda to get rid of the 'acid/sour' flavour. Will defnitely be repeated.

I added 1.3 cup chunky peanutbutter, a snacksize applesauce and a 1/4 cup more flour. I substituted melted butter for vegtable oil and reduced it by a third. What I got was SERIOUSLY delicious, and insane warm right from the oven!

Quick and very easy. I only had 2 medium bananas so I cut the recipe in half, and also added vanilla and cinnamon to the batter. I have three boys, plus hubby was home so it was devoured immediately! Thank you for the terrific recipe.

This recipe made for delicious banana bread. I used salted butter instead of vegetable oil. I added about 3/4ths of a stick. Yummy!

If the bread is a bit heavy... next time use fresh self-rising flour, older flour makes it dense.

Nice simple recipe. I did add vanilla and used brown sugar instead. If the loaf takes too long to bake, do like I do and make muffins or small loaves instead! Makes a great simple Christmas or house warming gift! Bake a loaf or muffins and give with the recipe!!!

I made this for our neighbor as a thank you gift. I 2x to make muffins (which i cooked for 30 min) and a loaf. After sampling the muffins I may keep the loaf and give her the muffins. I added 2 tsp. vanilla, 2 tsp. cinnamon. Now this is the only bread I will make. Thanks for this.

This recipe was very good. I just tweaked it a little by adding brown sugar instead of white and added 1/2 tsp. of vanilla and a pinch of cinnamon. To me cinnamon is a fall spice and it goes well with bananas.
