Comments: I make a lot of cookies, but this is my favorite oatmeal cookie. You can vary the add-ins and make the basic cookie taste so different. I also have added toffee chips to the dough, uuuummm, good! |
Ingredients:  3/4 cup butter flavored Crisco ¼ cup butter, softened 1 1/2 cups firmly packed brown sugar 2 eggs 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 teaspoon baking soda 3 cups rolled oats (old fashioned, uncooked) 1 ½ cups chopped pecans or walnuts (toasted) |
Instructions: Preheat oven to 350ºF (175ºC). Beat together Crisco, butter and sugar until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, and salt; mix well. Stir in oats, and chopped pecans; mix well. Drop by rounded tablespoonfuls onto cookie sheet. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Makes: About 4 dozen Variations: May add chocolate chips, raisins, dates, or dried apricots (chopped), spices (cinnamon, ginger, nutmeg) or add ¼ cup cocoa for a chocolate cookie. |
