Victoria Sponge Cake

This is the ultimate holiday, special occasion or birthday cake; the cake layer is filled with luscious strawberry jam and fresh sliced strawberries, then sweetened whipped cream is spread over the berries. Next, the top layer is placed over this decadent filling and then dusted with confectioners' sugar and decorated with sliced strawberries, or if desired, spread whipped cream over top of cake and garnish with fresh strawberries.

Ingredients:
For the Cake:
1/2 cup (1 stick/4 oz./113g) unsalted butter, softened
1 cup granulated sugar
4 large eggs
2 cups (8 oz./225g) cake flour
2 tsp. baking powder
Pinch of salt
1 tsp. vanilla extract
4 tbsp. milk

Strawberry and Whipped Cream Filling:
4 tbsp. strawberry jam
2 cups sliced fresh strawberries
1 1/2 cups heavy whipping cream, chilled
2 tbsp. granulated sugar

Topping:
1 - 2 tbsp. confectioners' sugar or granulated sugar or whipped cream

Instructions:
For the Cake:
Preheat oven to 350°F/180°C. Butter and flour 2 round (8-inch x 1 1/2-inch deep) cake pans. Line bottom of pans with parchment paper and butter parchment paper.

In a small bowl, combine the flour, baking powder and pinch of salt; set aside.

With electric mixer, cream the butter and sugar until light and fluffy. Add the vanilla; then add the eggs one at a time, mixing well after each addition. On low speed, slowly add the flour mixture. When flour mixture has been fully incorporated, add the milk, one tablespoon at a time until mixed into batter well.

With a rubber spatula, scrape batter into prepared cake pans and even out tops with the back of a spoon. Bake on middle rack of preheated oven until the cakes are beginning to come away from edges of pan and a cake tester inserted in center of cakes comes out clean, about 20 to 25 minutes. Remove cakes from oven and place pans on wire rack for 10 minutes, then invert cakes from pans onto racks (right side up), and let cool completely, approximately 1 hour.

Strawberry and Whipped Cream Filling:
Chill the mixing bowl and beaters that you will use to whip the cream with, in the freezer for 15 minutes or in the refrigerator for 30 minutes. Whip the chilled cream, adding the 2 tbsp. sugar, until soft peaks form.

Invert one cooled cake layer on serving plate. Spread with the 4 tbsp. strawberry jam. Place sliced strawberrries over jam, then spread half of the whipped cream over sliced strawberries, leaving a 1-inch border around edge of cake. Top with second cake layer, right side up. Sift confectioners' sugar over top of cake, or sprinkle granulated sugar over top of cake or frost cake with remaining half of whipped cream. Cover and refrigerate cake until serving time. Garnish with fresh strawberries, if desired. Cut cake into wedges to serve. Cover and refrigerate any leftover cake.

Makes 8 servings.

looks good but i editted it a bit like instead of fresh cream i used butter cream (icing sugar and butter ) and it was so tasty. i also put icing on top and it was fab. i also used your recipe as well and it was good. i used both. i found the peoeple on diets went for your recipe. thankzz

I haven't made this cake yet but my nan is making me bake it for her and her sewing club next week. But the problem is that i have to make double as there is so many of them. This was a "not too heavy" dessert and delicately sweet. I also made a few changes. First; I used four (4) pans instead of two (2), this made it lighter yet and appeared to have less calories. second; instead of using vanilla I used a vanilla bean. Third; I alternated a strawberry sauce & whipped cream with a blueberry sauce & whipped cream I did not use a jam. I added fresh Blueberries with the fresh strawberries for the red, white & blue affect. I made this for my daughters B-day 7/3/2007 there wasn't even a crumb left. I know that I changed alot but if it werent for Diana, I would'nt have had the ideas.

yeh great recipe... although if there is only one person eating the cake then it would take a little time to finish... i reccommened just a jam filling and icing sugar on the top... or if you would like a nicer filling then maybe chocolate spread or butter cream... these helps with the shelf life.

a good basic recipe. the nice thing about it is that instead of vanilla extract you can add whatever flavourings you like, such as lemon or coffee or any other flavouring. made a lemon victoria sponge and used buttercream lemon filling. it was delicious.

Tried this cake and it turned out badly. The ingredients are confusing where 2 cups (8 oz./225g) cake flour didn't match. Which one is right?, 2 cups or 225g?. I tried using 2 cups, and it doesn't puff, a bit dry and hard. I wonder why nobody comments/ experience this before?

I am an avid baker and I followed all the instructions, but the longer my cake was cooling, the more the middle sunk. It was a disaster. The center of the cake completely collapsed. I will not be trying this recipe again.

this was ok, but i think that when i did it i used brown sugar, and may have cooked it for a little too long, but it didn't come out very soft, and the cake weighed down the filling so it all oozed out, even after i put it in the refridgerator.

Followed recipe 100% percent except took peoples advise about the typo on the flour and used 8oz. It only made enought for one pan so had to cut in half and do half moon. Also didnt have very much flavour to it. A little disspaointed after reading all the good reviews.

Okay guys cakes in the pan and I do agree the mix looks little. However, I managed to split it between both pans and know they are both baking in the oven 18 mins to go.. I am super excited my family just loves this brithish cake

Ok guys, I have made two of these cakes since my last post and they are super fab!!! I use 8 oz. flour and 4 oz. butter and I carefully divide the batter into both pans. Remember this is a traditional cake not super big. I mix the strawberry seedless jam and then spread it. Raspberry jam is also super yum. I am taking this cake over to my sisters house for new years. Oh I forgot I also spray whipped cream which makes it Delicious. This cake is the best.
