Vanilla Sauce-Without Eggs

Servings: Makes 1-1/2 cups

A wonderful light sauce for Bread Puddings.........

Ingredients:
1/2 cup sugar
1 tablespoon corn starch or flour
1 cup boiling water
2 tablespoons butter
1 1/2 teaspoons vanilla extract
1 small pinch of salt
small amount of ground nutmeg, optional

Instructions:
In small saucepan, mix sugar and corn starch; gradually stirring in boiling water. Stir constantly and cook at slow boil for 5 minutes or until it thickens to desired consistency. Stir in butter, vanilla and nutmeg. Serve warm. Store in refrigerator.

NOTE: Lemon extract or other flavor extracts may be used in place of vanilla to change flavor.
