Instructions: Prepare six (4-ounce) soufflé dishes by wrapping 6 strips of lightly oiled aluminum foil around outside of dishes to form collar, extending 1 inch above top edge. Melt butter in 1-quart saucepan; stir in sugar. Cook over medium heat until mixture just comes to a boil (1 minute). Stir in pecans; continue cooking 1 minute. Remove from pan. Set aside. Pour lime juice into 1-quart saucepan; sprinkle with gelatin. Let stand until gelatin is softened (5 minutes). Cook over low heat, stirring occasionally, until gelatin is dissolved (1 to 2 minutes). Add sweetened condensed milk and food color to gelatin mixture; mix well. Beat whipping cream in chilled large bowl at high speed, scraping bowl often, until stiff peaks form. Gently stir in lime mixture. Place 1 tablespoon pecan streusel in bottom of each prepared soufflé dish. Divide lime mixture evenly among prepared dishes. Cover; refrigerate until firm (at least 3 hours). To serve, remove foil; gently press remaining streusel mixture around edges of each soufflé. Makes 6 servings.
