Lovely Lemon Curd Bars

These are fantastic. I was so pleasantly surprised how much I loved these bars...I've never had this reaction to a lemon bar recipe before. The whipping cream makes the filling creamy and takes away a little bit of the (sometimes overpowering) tart lemon flavor. The crust is fantastic. These stayed in my refrigerator for four days and the crust didn't turn soggy at all. Note that there are a lot of bubbles on the surface after it bakes. Sift powdered sugar on before serving and that will cover the bubbles and make a nice presentation. I used a 9-inch pan as the recipe states...I just greased the pan generously with cooking spray and had no problem getting these out of the pan. These lemon bars cut neatly, too. Make these...you won't be disappointed. This is the recipe I will repeat whenever I have extra lemons sitting around on the kitchen counter. :)

I loved these! The filling was creamier and more flavorful than a regular lemon bar. The crust was perfect - delicious and stayed crisp. I used an 8-inch pan and would do that again. I didn't line the pan with parchment and had no problem getting the bars out or cutting them neatly.
