Brunch Fruit Puff

Your guests will think you spent hours preparing this elegant dish. Fill the golden puff pastry with some of your favorite canned or fresh fruit and top with a sprinkling of nutmeg and confectioners' sugar. This wonderfully easy dish is perfect for breakfast, brunch or dessert.

Ingredients:
3 tbsp. butter
4 eggs
1 cup milk
1/2 tsp. lemon rind, grated
1 cup all-purpose flour
2 tbsp. granulated sugar
1/2 tsp. salt
4 cups sliced, fresh or canned peaches, drained (or your favorite fruit)
Ground nutmeg
Confectioners' sugar, sifted

Instructions:
Preheat oven to 425ºF (220ºC).

Divide butter evenly into bottoms of two 9-inch (23 cm) pie plates. Place pans in oven while preparing batter. Place eggs, milk and lemon rind in blender. Mix well. Add dry ingredients and blend until smooth. Pour batter into hot butter in pie plates, dividing evenly. Bake at 425ºF (220ºC) for 20 minutes or until puffed and golden. Fill right away with sliced fruit. Sprinkle with nutmeg and confectioners' sugar. Cut into wedges and serve immediately.

NOTE: Recipe can be halved if desired to make 1 puff.

Makes 2 fruit puffs, (each puff serves 4).

I have made this recipe many, many times, and it is always a hit. It is elegant, yet kids love it too! They think its great fun to watch the puff "puff" in the oven.

They are BRILLIANT! I have tried the recipe for my sister's birthday and they were just a hit! Although the bad thing was that I should have made more but I didn't know that the kids would eat them because they contain fruit!
