Puffed Baked Apple Pancake

Ingredients:  1/4 cup (1/2 stick) unsalted butter 3 large eggs 3/4 cup all-purpose flour 3/4 cup milk 1 apple (Golden Delicious apples are good), peeled, cored and cut into thin slices 1/4 cup brown sugar 1/2 teaspoon ground cinnamon 2 tablespoons fresh lemon juice |
| Instructions: Preheat oven to 425°F (220°C). Cut apple into thin slices and toss slices with brown sugar, cinnamon and lemon juice. Melt butter in a large ovenproof frying pan, wok, or paella pan until the butter is just melted (3-4 minutes.). In a blender or food processor, blend the eggs, milk and flour at high speed until smooth and well blended. Pour the batter into the pan of melted butter. Arrange the apple slices in a spoke-like pattern in the center. Bake for 15-20 minutes or until puffed and golden brown. Serve immediately with maple syrup. (Variation: omit apples; serve pancake with fresh berries or other fresh fruit or with powdered sugar and lemon juice.) Makes: 4-6 servings. |

SO GOOD! I woke up this morning craving apple pancakes like I'd tasted at a restaurant called the 101 diner down in San Diego. I found this recipe online and went for it. This was my 1st time making it and it came out just like at the restaurant's if not better! I did make one slight addition to it by saving off the extra brown sugar/lemon juice mix to drizzle on at the very end (after it was already puffed and just starting to turn golden) and place the whole thing under the broiler for just under a minute. Thanks for the recipe!
