Deliciously rich, yet defiantly light, parfaits are perfect for summer dessert treats.

Ingredients:

8 oz. cream cheese, softened
7 oz. jar marshmallow creme
1 cup sliced strawberries
1 cup blueberries
Fresh mint sprigs (optional)
Orange slices (optional)

Instructions:
Mix cream cheese and marshmallow creme until well blended. Refrigerate. Layer fruit with cream cheese mixture in dessert dishes or wine glasses. Garnish with fresh mint leaves and orange slice.

Makes 4 servings.

This was a dessert I made in my cooking class at school. It was very delicious and a healthy treat. Whipped cream makes a perfect topping!
