Potato Pear Cream Cheese Log

Ingredients:
1 can (approximately 8 ounces) pears, cut into chunks
1 lemon rind finely grated
3 tbsp. lemon juice
3 tbsp. granulated sugar
4 ounces cream cheese
3 egg yolks
3 egg whites
1 cup mashed potatoes, (cooked and at room temperature)
1 tsp. baking powder
Confectioners' sugar for dusting

Instructions:
1. Mix the cream cheese and the sugar; then beat in egg yolks, one at a time. Add lemon rind and juice. Add cooled mashed potatoes, baking powder and beat.

2. Whisk egg whites until stiff. Add 3 tbsp. whisked egg whites into cheese mix. Then fold in gently the remaining whisked egg whites and pears cut into chunks.

3. Pour into greased 9x5 inch loaf pan. Bake at 350 degrees (180 degree C) for 45-60 minutes or until firm to touch.

4. Sprinkle with confectioners' sugar. Serve hot or cold with ice cream.

Makes 12 servings.
